Block & Barrels oozes craftsmanship. Upon entering, you walk past the lunch kitchen reminiscent of a small butcher's shop. Here, sausages hang out to dry, meat lies maturing, ham is sliced and minced meat is freshly turned.

Sustainability and craftsmanship. That is important to us. That is why we choose blister head meat and free-range pigs, both from the province. And that is also why we work with the Smit family. A family of butchers who have been in the business for three generations. They used to buy the cows themselves at the cattle market, but now they buy them directly from the farmer. Pure Dutch beef. Together with the farmer, they reintroduce the blister head to the Groningen landscape. Gezinus visits the farms every week to see how the cows are doing. Everything in the butcher's shop is still done by hand. It could hardly be more traditional. That is why Block & Barrels works exclusively with this butcher.
The blister head breed of cattle is an old breed of cattle that existed in Groningen as early as the Middle Ages. The cows are uniformly black or red with a white head and a black or red blister around the eye. It is a strong breed of cow. They hardly need extra feed in winter, have a strong constitution and therefore do not need preventive antibiotics.
The blister head is traditionally a dual-purpose cow: both a beef and dairy cow. This makes them less of a burden on the environment. They spend most of the year in the meadow eating whatever they find. Unlike other breeds, the blister head does not disturb ecosystems. The blister head is a good and sustainable cow. The meat of the blister head is marbled, which gives it a very refined taste. Wherever possible, we serve blister head meat.
