“ "Deliciously local" ”

Cheese from De Roode Schuur Cheese Farm

Middag-Humsterland is located northwest of the city of Groningen. Kaasboerderij De Roode Schuur can also be found in this unspoilt farm landscape. Freek and Angelique Bisschop look after 120 cows and their young cattle at this dairy farm. In the summer, they let their cattle graze in the meadow. The fact that the cows can enjoy grazing in the meadow in Oldehove is good for the quality of the milk and therefore also for the quality of the cheese. Part of the milk is used to make artisanal farm cheese. Raw farm milk is used for this cheese and this ensures a delicious flavour. De Roode Schuur has an extensive range, they have from young to old cheese, as well as numerous other flavours.

Groningen mustard

Groninger mustard is made from mustard seeds from Groningen soil. With Groninger mustard, the mustard seeds are only coarsely ground and this ensures a spicier flavour. The authentic taste of Groninger mustard is the perfect addition for cheese butterflies. For this recipe, de Marne' s Groninger mustard has been used. De Marne believes in the old recipe, "because sometimes good is just good enough". Groninger mustard has been in de Marne's range for over 127 years.

Development

Place the individual sheets of puff pastry on a separate plate, remove the baking paper and leave the puff pastry to defrost. Meanwhile, grate the Groningen cheese into fine pieces.

Place all the individual sheets of puff pastry with their edges touching and press the edges together firmly, so that the sheets eventually form one large rectangular sheet of puff pastry. Spread the Groningen mustard over the puff pastry. The amount of mustard depends on your own preference, but a thin layer over the puff pastry is generally sufficient. Next, spread the grated cheese over the mustard. Spread the cheese evenly, ensuring there is an equal amount throughout. Roll both long sides of the puff pastry towards the centre. Leave the pastry roll to rest in the fridge for 10 minutes.

In the meantime, crack the eggs into a small bowl and beat them well. Line the air fryer basket with a sheet of baking paper. Cheese may leak out of the pastries, so make sure the base is well covered.

Take the dough roll out of the fridge and cut it into about 15 slices. Brush the top of each slice with the beaten egg. Place the slices on the baking paper in the air fryer. Set the air fryer to 200 degrees and set the timer for 10 minutes. After ten minutes, you’ll have delicious, golden-brown cheese butterflies.

Enjoy your meal!
