Pumpkin from the Groningen countryside
The climate and soil conditions in Groningen are ideal for growing pumpkins. The fertile clay soil ensures bountiful harvests and produces high-quality pumpkins. Pumpkin cultivation contributes to a stronger local economy and fosters a sense of community between farmers and local communities. The flesh of these pumpkins is soft and creamy, making them ideal for puréeing into a silky-smooth pumpkin purée.
Development
Cut the pumpkin in half and remove the seeds. Dice the flesh and cook the pumpkin in a small amount of water for about 15 minutes until tender. You can leave the skin on. Drain the cooked pumpkin and leave it to cool completely. Mash the pumpkin cubes into a smooth, soft pumpkin purée.
Next, melt the butter in a small pan on the hob. Now it’s time to mix the self-raising flour with the cinnamon, ginger and salt. Next, beat the eggs with the pumpkin purée, caster sugar, milk and butter. Fold in the self-raising flour mixture until you have a smooth, thick batter.
Bake the waffles according to the waffle iron’s instructions. Make sure you do not open the waffle iron whilst baking. You can tell whether the waffles are cooked by the amount of steam coming from the iron. This takes about 5–7 minutes.
Make the waffles even more delicious by drizzling them with maple syrup. Tip: mix apple with cinnamon and sugar and sprinkle this over the waffles for a fresh finishing touch.
