In Groningen, we don’t eat ‘friet’, but ‘patat’. And we prefer to make them ourselves from potatoes freshly dug from the Groningen soil. Combine them with homemade Brander mayonnaise and you’ve got Groningen gold in your hands.
Key elements
As for the chips:
- 5 large potatoes per person
- a tablespoon of sunflower oil
- salt
For Brander mayonnaise:
- 1 egg yolk
- 1 heaped tablespoon of French mustard
- 1 tablespoon of vinegar
- 1 teaspoon vegetable stock powder
- 1/2 teaspoon of Worcestershire sauce
- 250 ml peanut oil
- salt & pepper
Cafetaria Brander
Although Brander mayonnaise is currently causing a sensation throughout the country, the phenomenon originated in Groningen. The recipe was developed by the Brander family of Brander’s cafeteria on the Grote Markt. For 30 years, the cafeteria – which was housed in the building now occupied by Café Hoppe – was renowned for its much-loved mayonnaise. But in 1980, the cafeteria closed its doors for good. Years later, Wim Dijk, owner of Oliehoorn and Stadjer, approached the Brander family to recreate the now famous sauce. And so it came to pass: today, the whole of the Netherlands is a fan of this authentic Groningen sauce.
Development
Wash the potatoes thoroughly with water and cut them into chips about 2 cm wide. We left the skins on, but you can also choose to peel them off. Place the chips in the air fryer with a tablespoon of sunflower oil. Set the air fryer to 200 degrees for 20 minutes. Give the air fryer basket a quick shake every 6 minutes so that the chips are well mixed. You can also simply choose to deep-fry the chips in a deep-fat fryer. In that case, pre-fry the chips for 5 minutes at 140 degrees. Take them out for half an hour, then deep-fry them until crispy for 5–6 minutes at 180 degrees.
Whilst the chips are frying, you can make the mayonnaise. Put the vinegar, mustard, egg yolk, vegetable stock powder and Worcestershire sauce into a bowl. Mix the ingredients briefly with a hand mixer. Then, whilst mixing, gradually add the peanut oil to the rest of the ingredients in the bowl. Continue until all the peanut oil has been incorporated and the mayonnaise has reached the desired consistency. Grind a little black pepper over the sauce to finish it off.
Finally, take the chips out of the air fryer and sprinkle salt over them. Serve with the mayonnaise.
Enjoy your meal!
