Development
Custard
To make the custard, scrape the seeds from the vanilla pod and add them to a saucepan along with the whipping cream and milk. Give it a quick stir and bring to the boil.
Place the egg yolks and sugar in a bowl and whisk briefly. Then stir the warm milk mixture into the bowl and whisk everything together thoroughly. Then pour the mixture back into the pan and heat it over a low heat. Keep stirring well until the mixture has reached the desired thickness. Leave the mixture to cool, stirring continuously to prevent a skin from forming. Then place it in the fridge.
Trifle
Peel the apples and cut them into cubes. Place them in a bowl and add a tablespoon of sugar and a teaspoon of cinnamon. Heat the butter in a pan and fry the apple mixture for 5 to 10 minutes until it’s slightly softened. Once the apple mixture is ready, transfer it to a bowl. Then add the dried apricots.
Meanwhile, crumble a few ‘kniepertjes’ in a food processor or place them between sheets of baking paper and roll over them a few times with a rolling pin. Set this aside in a bowl.
Put the rest of the whipping cream and the vanilla sugar in a bowl and whip until stiff. Add the farmhouse yoghurt and mix well.
Now you can start assembling the trifle, layering the ingredients. Place some kniepertjes crumbs at the bottom of the glass, followed by a layer of custard. Next, add a layer of the apple and ‘boerenjongens’ mixture, followed by a layer of cream. Next, add a layer of Groningen jam, then another layer of cream and the apple mixture. Finish the trifle with some crumbs and a kniepertje on top.
Happy festive season and enjoy your meal!
